What you will need:

  • 2 Packets of white chocolate Tim Tams
  • 10 Arrowroot biscuits 
  • 3/4 Cup shredded coconut
  • 1/2 Cup Allen's raspberry lollies, quartered
  • 1 Tin of sweetened condensed milk
  • 60g Salted butter
  • 200g White chocolate
  • 1 Tbsp coconut oil
  • A food processor

 

Method

  • Start by preheating your oven to 160℃ and line a baking tray with baking paper. Scatter the shredded coconut over the tray and toast the coconut in the oven for 5-10mins until it turns golden brown. Keep a close eye on it as coconut does burn quickly
  • Line a slice tray with baking paper and set aside
  • Add the arrowroot biscuits and Tim tams into a food processor and blitz for 5 seconds to roughly chop them and then transfer them into a large bowl
  • Add in the raspberry lollies and toasted coconut and stir through to combine
  • Pour in the condensed milk and mix until well combined. Transfer the mixture into the lined slice tray, pressing it down with a spatula, and set aside
  • In a heatproof bowl, microwave the white chocolate and coconut oil in 30 second intervals until melted and smooth
  • Pour the melted chocolate over the slice, spreading it evenly with the spatula
  • Place it in the fridge for at least 4 hours, or overnight, to set
  • Serve and enjoy!
