What you will need:
- 2 Packets of white chocolate Tim Tams
- 10 Arrowroot biscuits
- 3/4 Cup shredded coconut
- 1/2 Cup Allen's raspberry lollies, quartered
- 1 Tin of sweetened condensed milk
- 60g Salted butter
- 200g White chocolate
- 1 Tbsp coconut oil
- A food processor
Method
- Start by preheating your oven to 160℃ and line a baking tray with baking paper. Scatter the shredded coconut over the tray and toast the coconut in the oven for 5-10mins until it turns golden brown. Keep a close eye on it as coconut does burn quickly
- Line a slice tray with baking paper and set aside
- Add the arrowroot biscuits and Tim tams into a food processor and blitz for 5 seconds to roughly chop them and then transfer them into a large bowl
- Add in the raspberry lollies and toasted coconut and stir through to combine
- Pour in the condensed milk and mix until well combined. Transfer the mixture into the lined slice tray, pressing it down with a spatula, and set aside
- In a heatproof bowl, microwave the white chocolate and coconut oil in 30 second intervals until melted and smooth
- Pour the melted chocolate over the slice, spreading it evenly with the spatula
- Place it in the fridge for at least 4 hours, or overnight, to set
- Serve and enjoy!
