Gourmet Vegetarian Italian Toastie

I’m a sucker for toasties especially in the cooler months! I highly recommend trying my gourmet Italian toastie, it is delicious. Best part about this toastie is the bread has 50% less carbs.

What you will need:

  • 2 Slices of Abbott's bakery lower carb white loaf bread (or any bread of your choosing)
  • Basil pesto
  • Roasted eggplant slices
  • Roasted capsicum slices
  • Artichokes slices
  • Rocket
  • Sliced mozzarella
  • A toastie maker

 

Method

  • Start by buttering both slices of bread and then spread on some basil pesto
  • Then layer on some roasted eggplants, roasted capsicum, artichokes, rocket and a slice of mozzarella on one slice
  • Add the second slice of bread on top, butter side up and place down on the toastie maker, butter side down. Butter the top slice and then pull down the lid
  • Toast until golden and crispy on the outside
  • Serve and enjoy!
