I love a crowd pleasing side and this one is it! Please try it.
Prep time: 20 minutes | Cook time: 35 minutes | Serves 2
What you will need:
- ½ kg Chat potatoes, quartered
- Truffle oil
- Paprika
- Garlic powder
- Salt
- 1x Punnet coloured tomatoes
- EVOO
- 1x Packet halloumi, sliced
- Honey
- Chilli flakes to taste
- ½ Cup of Greek yogurt
- ¼ Cup of Pesto
- Handful of chopped parsley
Method
- Preheat the oven to 180°C and line a baking tray with baking paper
- Scatter the potatoes onto the oven tray and drizzle over some truffle oil, sprinkle over some salt, garlic powder and paprika. Give it a little mix and place into the oven for 30 minutes
- At the halfway mark, push the potatoes over to one side of the tray and add the tomatoes in with a drizzle of olive oil and sprinkle of salt
- Heat up some olive oil in a fry pan and fry up the halloumi. Whilst cooking, drizzle over some honey and sprinkle some chilli flakes over the top
- Plate the salad up by adding the potatoes, roasted tomatoes and halloumi. Sprinkle over some chopped parsley. Dollop on some yogurt and add some pesto on top of the dollops of yogurt
- Enjoy!
