My take on an Italian inspired salad that screams Euro Summer! You only need to add an Aperol Spritz and you are basically there.
Prep time: 10 minutes | Serves 1
What you will need:
- A handful of artichokes, chopped
- 1x Packet of prosciutto
- A handful of basil leaves
- A ball of burrata
- A handful of pistachio nuts, chopped
- EVOO
- Salt and pepper to taste
- Half a lemon
Method
- Plate your salad up by scattering on the artichokes, prosciutto and basil leaves.
- Break up the ball of burrata and dollop it on top
- Sprinkle the pistachios on top, drizzle over some EVOO and a squeeze of lemon juice. Add some salt and pepper to taste
- Enjoy!
