Thai Red Ginger Dumpling Curry

What you will need:

  • 1 Tbsp EVOO
  • 2 Tbsp crushed ginger
  • 2 Tbsp red curry paste
  • 30 Dumplings
  • 1 Tin coconut milk
  • 400ml Veggie stock
  • 1 Lemon
  • Chilli oil
  • A handful of coriander, chopped

 

Method

  • Start by adding the EVOO, ginger and red curry paste into a pot over medium heat and stir to combine
  • Add in your dumplings and stir through until coated evenly
  • Pour in the coconut milk and stock and then cover the pot and cook for 5-10 mins or until the dumplings are cooked through
  • Remove the pot from the heat and squeeze over the lemon juice with a drizzle of chilli oil on top
  • Serve with a sprinkle of coriander to garnish and enjoy!
