What you will need:
- 1 Tbsp EVOO
- 2 Tbsp crushed ginger
- 2 Tbsp red curry paste
- 30 Dumplings
- 1 Tin coconut milk
- 400ml Veggie stock
- 1 Lemon
- Chilli oil
- A handful of coriander, chopped
Method
- Start by adding the EVOO, ginger and red curry paste into a pot over medium heat and stir to combine
- Add in your dumplings and stir through until coated evenly
- Pour in the coconut milk and stock and then cover the pot and cook for 5-10 mins or until the dumplings are cooked through
- Remove the pot from the heat and squeeze over the lemon juice with a drizzle of chilli oil on top
- Serve with a sprinkle of coriander to garnish and enjoy!
