What you will need:

  • 24 Frozen wontons (or dumplings)
  • 1 Bunch of asian greens (I used bok choy)
  • 1 Tbsp vegetable oil
  • 1 Onion, finely chopped
  • 1 Tbsp piece ginger, grated
  • 2 Garlic cloves, minced
  • 3 Tbsp red curry paste
  • 4 Cups chicken stock
  • 1 Can coconut milk
  • 1 1/2 Tbsp caster sugar
  • 1 Tbsp fish sauceĀ 
  • Lime juice, to taste


To garnish:

  • Long red chilli, sliced
  • Fried shallots

Method

  • Start by steaming the wontons and set aside
  • Heat up the oil in a large pot over medium heat
  • Add the onion, ginger and garlic and stirĀ until fragrant and soft, about 2-3 mins
  • Add the red curry paste and cook for a further minute
  • Add in the chicken stock, coconut milk, caster sugar, and fish sauce. Bring it to a boil and then reduce to a simmer for 10 mins
  • Remove from heat and add in the lime juice, asian greens and steamed dumplings
  • Garnish with red chillies and fried shallots
  • Serve and enjoy!
