What you will need:
- 24 Frozen wontons (or dumplings)
- 1 Bunch of asian greens (I used bok choy)
- 1 Tbsp vegetable oil
- 1 Onion, finely chopped
- 1 Tbsp piece ginger, grated
- 2 Garlic cloves, minced
- 3 Tbsp red curry paste
- 4 Cups chicken stock
- 1 Can coconut milk
- 1 1/2 Tbsp caster sugar
- 1 Tbsp fish sauceĀ
- Lime juice, to taste
To garnish:
- Long red chilli, sliced
- Fried shallots
Method
- Start by steaming the wontons and set aside
- Heat up the oil in a large pot over medium heat
- Add the onion, ginger and garlic and stirĀ until fragrant and soft, about 2-3 mins
- Add the red curry paste and cook for a further minute
- Add in the chicken stock, coconut milk, caster sugar, and fish sauce. Bring it to a boil and then reduce to a simmer for 10 mins
- Remove from heat and add in the lime juice, asian greens and steamed dumplings
- Garnish with red chillies and fried shallots
- Serve and enjoy!
