Crispy Halloumi Pesto Pasta

The @equalution queen @amal.wakimshared the most delicious creamy pesto pasta with crispy halloumi and I knew I had to try it. Next time I’ll add some chicken 👏🏽 So delicious 🤤

What you will need:

  • 70g Spaghetti 
  • EVOO
  • 40g Halloumi cheese
  • 1/2 Brown onion, chopped finely
  • 1 Tbsp pesto
  • A Handful of sun-dried tomatoes, roughly chopped
  • 1 Clove garlic, minced
  • 300ml Light thickened cream
  • Salt and Pepper

 

Method

  • Start by cooking the pasta as per packet instructions. Drain and set aside
  • Grate the halloumi into a bowl and set aside
  • Heat up a tbsp of EVOO in a pan over medium heat and add the grated halloumi. Cook until golden and crunchy. Remove from the pan and set aside
  • In the same pan, add the onion and garlic and cook until soft and translucent, approximately 2-3 mins. Add the pesto, cream and sun-dried tomatoes with a sprinkling of salt and pepper and stir to combine
  • Add the drained pasta and stir to coat through the sauce
  • Transfer to a plate and top with the grated halloumi
  • Serve and enjoy!
