What you will need:
- 70g Spaghetti
- EVOO
- 40g Halloumi cheese
- 1/2 Brown onion, chopped finely
- 1 Tbsp pesto
- A Handful of sun-dried tomatoes, roughly chopped
- 1 Clove garlic, minced
- 300ml Light thickened cream
- Salt and Pepper
Method
- Start by cooking the pasta as per packet instructions. Drain and set aside
- Grate the halloumi into a bowl and set aside
- Heat up a tbsp of EVOO in a pan over medium heat and add the grated halloumi. Cook until golden and crunchy. Remove from the pan and set aside
- In the same pan, add the onion and garlic and cook until soft and translucent, approximately 2-3 mins. Add the pesto, cream and sun-dried tomatoes with a sprinkling of salt and pepper and stir to combine
- Add the drained pasta and stir to coat through the sauce
- Transfer to a plate and top with the grated halloumi
- Serve and enjoy!
