This is such an easy ‘fancy’ dinner! I made this again and fried off a couple of anchovies with the garlic and onion. Trust me I’m not an anchovies person but the subtle salty kick is a winner. Kids didn’t even notice! You will love this one x

What you will need:
- 500g Green prawns, peeled and deveined
- 1 Tomato, roughly chopped
- 2 Garlic cloves, crushed
- 1 Brown onion, sliced finely
- A handful of parsely
- 300ml Cream
- A handful of spring onions, chopped
- 1 Tbsp of truffle oil or EVOO
- 1 Packet of Barilla Pappardelle all'uovo
- Salt and Pepper
- Grated parmesan
Method
- Start by cooking the pasta as per packet instructions, drain and set aside
- In a frying pan, sauté the onion and garlic in the truffle oil. Once browned, add the tomatoes, parsley and prawns. Season with salt and pepper
- Once the prawns are no longer translucent and have turned orange, 1-2 minutes on each side, add in the cream and a handful of parmesan. Stir until parmesan has dissolved
- Transfer the cooked pasta into the pan with the cream sauce and stir through until combined
- Plate your pasta with a sprinkle of spring onions and parmesan on top and salt and pepper to taste
- Serve and enjoy!
