Prawn & Avocado Salad

If this isnt summer in a plate I don’t know what is! Literally a 10 min side or main to whip up.

Prep: 5 mins | Cook time: 3-4 hours fridge time  | Serves: 8-10


What you will need:

  • 1 Large bag of salad mix
  • 1 Bag of rocket
  • 1 Avocado
  • A handful of spring onions, sliced
  • A handful of chives, chopped finely
  • A handful of slithered almonds
  • 1 Packet of prawns with garlic butter
  • 1 Lemon, sliced
  • 1 Orange, sliced 
  • EVOO
  • Salt and Pepper




      • Fry up the prawns in a pan over medium-high heat with a couple of lemon and orange slices 
      • Add all remaining ingredients to a serving platter and top with the prawns, season with salt and pepper and a drizzle of EVOO
      • Serve and enjoy!
