Creamy Baked Tortellini with Roast Chicken and Mushrooms

 Lazy dinner incoming…. Creamy baked tortellini with roast chicken and mushrooms. So delicious and zero brain power required. Big win for a mid week dinner x

What you will need:

  • 1 Packet of spinach and ricotta tortellini
  • Half a roast chicken, shredded
  • 1 Cup of sliced mushrooms
  • 300ml of cream
  • 2 Tbsp of chicken stock powder
  • Salt and Pepper
  • Parmesan cheese

 

Method

  • Start by preheating your oven to 180°C 
  • In a deep baking dish, add a drizzle of EVOO and then add the packet of tortellini
  • Top with some shredded roast chicken and the sliced mushrooms
  • In a jug, add the cream and chicken stock powder and stir until combined and then pour over the tortellini
  • Sprinkle some salt and pepper over the top with a sprinkle of parmesan cheese 
  • Pop it into the oven for 20 minutes 
  • Serve and enjoy!
