Lazy dinner incoming…. Creamy baked tortellini with roast chicken and mushrooms. So delicious and zero brain power required. Big win for a mid week dinner x

What you will need:
- 1 Packet of spinach and ricotta tortellini
- Half a roast chicken, shredded
- 1 Cup of sliced mushrooms
- 300ml of cream
- 2 Tbsp of chicken stock powder
- Salt and Pepper
- Parmesan cheese
Method
- Start by preheating your oven to 180°C
- In a deep baking dish, add a drizzle of EVOO and then add the packet of tortellini
- Top with some shredded roast chicken and the sliced mushrooms
- In a jug, add the cream and chicken stock powder and stir until combined and then pour over the tortellini
- Sprinkle some salt and pepper over the top with a sprinkle of parmesan cheese
- Pop it into the oven for 20 minutes
- Serve and enjoy!
