Donut Bread and Butter Pudding

What you will need:

  • 10 Cinnamon doughnuts, cut in half horizontally 
  • 410g Can of pink lady apple slices in juice, finely chopped
  • 1/4 Cup sultanas 
  • 4 Eggs, lightly whisked
  • 300ml Thickened cream
  • 3/4 Cup milk
  • 1 Tsp vanilla extract 
  • 1/4 Cup caster sugar
  • Boiling water
  • Icing sugar

 

Method

  • Start by preheating your oven to 160°C and grease a baking dish
  • Arrange the donught bases, cut side up into your baking dish
  • Divide the apples and sultanas on top of the bases and then replace the tops 
  • In a large jug, whisk together the eggs, cream milk, vanilla and caster sugar and then pour over the doughnuts
  • Pour enough boiling water into the pan to reach halfway up the side of the dish
  • Pop them into the oven for 50 minutes or until the centre of the pudding is just set
  • Set aside for 10 mins to cool slightly before serving
  • Dust some icing sugar over the top
  • Serve and enjoy!
