Chicken Basil Pesto Pasta

Prep time: 10 mins | Cook time: 15 mins | Serves: 4


What you will need:

  • 500g Chicken tenderloins, cut into pieces
  • 3/4 Cup of parmesan cheese
  • 1 Tbsp chicken stock powder
  • 2 Cups of spinach
  • 2 Cups of penne pasta
  • 300ml of cream
  • 1 Tbsp of EVOO
  • 2 Spring onions, chopped finely
  • 1 Brown onion, chopped finely
  • 1 Jar of basil pesto



  • Bring a pot of water to boil and cook pasta as per directions. Once cooked, drain and set aside
  • While the pasta is cooking, heat up the EVOO in a pan and brown the onions
  • Once onions become translucent, add in the chicken and cook until browned and cooked through. Sprinkle in some salt and pepper to season
  • Add in the cream and chicken stock and stir to combine
  • Stir through the pesto (I start with 3/4 of the jar and then add to taste)
  • Add the pasta to the pan and once combined, stir through the spinach, cheese and spring onions
  • Once the cheese is melted and the spinach has wilted, serve and enjoy!
