Need a quick tasty dinner for the family? I've got you! My Chicken Basil Pesto Pasta can be cooked in 15mins and everyone in the family will love it!
Prep time: 10 mins | Cook time: 15 mins | Serves: 4
What you will need:
- 500g Chicken tenderloins, cut into pieces
- 3/4 Cup of parmesan cheese
- 1 Tbsp chicken stock powder
- 2 Cups of spinach
- 2 Cups of penne pasta
- 300ml of cream
- 1 Tbsp of EVOO
- 2 Spring onions, chopped finely
- 1 Brown onion, chopped finely
- 1 Jar of basil pesto
Method
- Bring a pot of water to boil and cook pasta as per directions. Once cooked, drain and set aside
- While the pasta is cooking, heat up the EVOO in a pan and brown the onions
- Once onions become translucent, add in the chicken and cook until browned and cooked through. Sprinkle in some salt and pepper to season
- Add in the cream and chicken stock and stir to combine
- Stir through the pesto (I start with 3/4 of the jar and then add to taste)
- Add the pasta to the pan and once combined, stir through the spinach, cheese and spring onions
- Once the cheese is melted and the spinach has wilted, serve and enjoy!
