Breakfast Frittata

Very similar to a quiche except no pastry because well.....lazy! Best part about this is you can literally chuck in anything you have in the fridge and you’re set for breakfast!

Prep time: 10 mins | Cook time: 30 mins | Serves: 4

 

What you will need:

  • 6 Eggs
  • 1 Cup milk
  • 1/4 Cup parmesan cheese
  • Salt & Pepper
  • 1 Cup of spinach
  • A handful of mushrooms, sliced
  • Zucchini, grated and drained
  • A handful of cherry tomatoes, roughly chopped
  • A handful of asparagus, roughly chopped
  • Hot smoked salmon, broken into pieces (or protein of your choice)
  • 2-3 Squares of goat's cheese

 

Method

  • Start by heating the oven to 180 °C
  • In a bowl, whisk together the eggs, milk, parmesan cheese and salt and pepper
  • Transfer the whisked eggs to a baking tin and add all the remaining ingredients, except for the goat's cheese, into the tin and stir them through 
  • Use your hand and crumble the goat's cheese over the top
  • Sprinkle over some salt and pepper to taste
  • Pop the tin into the oven for 30 mins or until golden on top
  • Serve warm or cold - enjoy!
