Very similar to a quiche except no pastry because well.....lazy! Best part about this is you can literally chuck in anything you have in the fridge and you’re set for breakfast!
Prep time: 10 mins | Cook time: 30 mins | Serves: 4
What you will need:
- 6 Eggs
- 1 Cup milk
- 1/4 Cup parmesan cheese
- Salt & Pepper
- 1 Cup of spinach
- A handful of mushrooms, sliced
- Zucchini, grated and drained
- A handful of cherry tomatoes, roughly chopped
- A handful of asparagus, roughly chopped
- Hot smoked salmon, broken into pieces (or protein of your choice)
- 2-3 Squares of goat's cheese
Method
- Start by heating the oven to 180 °C
- In a bowl, whisk together the eggs, milk, parmesan cheese and salt and pepper
- Transfer the whisked eggs to a baking tin and add all the remaining ingredients, except for the goat's cheese, into the tin and stir them through
- Use your hand and crumble the goat's cheese over the top
- Sprinkle over some salt and pepper to taste
- Pop the tin into the oven for 30 mins or until golden on top
- Serve warm or cold - enjoy!
