Zucchini, Halloumi & Mushroom 'Sausage' Rolls

The most delicious zucchini, halloumi and mushroom ‘sausage’ rolls. Definitely better served warm. Enjoy x

Prep: 15 mins | Cook time: 30 mins | Serves: 4-6

 

What you will need:

  • 1 Zucchini, grated and water squeezed out
  • 1 Halloumi block, grated 
  • 1 Punnet mushrooms, grated
  • A handful of mozzarella
  • Garlic powder 
  • Pepper
  • 1 Sheet puff pastry 
  • Hot honey
  • Egg wash (1 whole egg, beaten)
  • Sesame seeds
  • Black sesame seeds

 

Method

  • Start by preheating your oven to 180 °C, line a baking tray with baking paper with your puff pastry sheet laid on top and set aside
  • In a bowl, combine the zucchini, halloumi and mushrooms with a sprinkle of garlic powder and pepper. Stir through to combine 
  • Lay the mixture down the middle of the puff pastry sheet with a drizzle of hot honey over over the top and roll it up
  • Slice the roll up into bite size pieces and brush the egg wash over the top
  • Sprinkle some sesame seeds and black sesame seeds over the top and place them into the oven for 30 minutes
  • Serve with a dipping sauce of your choice (I used sriracha) and enjoy!
