So simple but SO delicious!
Prep time: 10 mins | Cook time: 4 mins | Serves: 1-2
What you will need:
- 1x Small loaf sourdough, chopped into pieces
- EVOO
- 1x Punnet tomato medley, halved
- 1x Zucchini, thinly sliced (best done with a mandoline slicer)
- ½ Red onion, thinly sliced
- A handful of basil leaves
- 1x Tbsp of capers
- 1x Burrata ball
Method
- Heat up 1 tbsp of EVOO in a fry pan and fry up the chopped sourdough pieces until slightly golden
- Scatter the sourdough onto your plate, top with tomatoes, zucchini ribbons, onion, capers and basil leaves
- Place your burrata ball on top, drizzle with some EVOO and sprinkle with some salt and pepper to taste
