Tomato Burrata Salad

 


So simple but SO delicious!

Prep time:  10 mins | Cook time: 4 mins | Serves: 1-2

What you will need:

  • 1x Small loaf sourdough, chopped into pieces
  • EVOO
  • 1x Punnet tomato medley, halved
  • 1x Zucchini, thinly sliced (best done with a mandoline slicer)
  • ½ Red onion, thinly sliced
  • A handful of basil leaves
  • 1x Tbsp of capers
  • 1x Burrata ball

 

Method

  • Heat up 1 tbsp of EVOO in a fry pan and fry up the chopped sourdough pieces until slightly golden
  • Scatter the sourdough onto your plate, top with tomatoes, zucchini ribbons, onion, capers and basil leaves
  • Place your burrata ball on top, drizzle with some EVOO and sprinkle with some salt and pepper to taste
