I’m calling it. This is my favourite side dish of all time and I bet it will be yours too!
Prep time: 15 mins | Cook time: 35 mins | Serves: 4
What you will need:
- ½ kg Carrots, peeled and sliced diagonally
- EVOO
- 1 tbsp Za'atar spice
- ¼ tsp Cumin
- Salt and pepper
- 1 tbsp Fresh mint, chopped
- 2 tbsp Fresh parsley, chopped
- Honey
Feta Dip
- ½ Cup Feta
- 3 tbsp Ricotta
- 2 tsp EVOO
- 1 tbsp Lemon juice
- Pinch of salt and pepper
Method
- Preheat your oven to 200°C and line a baking tray with baking paper
- In a small bowl, add the carrots, cumin and drizzle of EVOO and toss to combine. Transfer them to the baking tray and pop them into the oven for 35 minutes
- To make the dip, add the dip ingredients to a blender and blitz until smooth
- Spread the feta dip onto a shallow plate and top it with the carrots once cooked through. Sprinkle over the parsley and mint on top and a drizzle of honey
- Serve and enjoy!
