Za’atar Roasted Carrots with Feta Dip


I’m calling it. This is my favourite side dish of all time and I bet it will be yours too!

Prep time: 15 mins  | Cook time: 35 mins | Serves: 4

What you will need:

  • ½ kg Carrots, peeled and sliced diagonally
  • EVOO
  • 1 tbsp Za'atar spice
  • ¼ tsp Cumin
  • Salt and pepper
  • 1 tbsp Fresh mint, chopped
  • 2 tbsp Fresh parsley, chopped
  • Honey

Feta Dip

  • ½ Cup Feta
  • 3 tbsp Ricotta
  • 2 tsp EVOO
  • 1 tbsp Lemon juice
  • Pinch of salt and pepper



  • Preheat your oven to 200°C and line a baking tray with baking paper
  • In a small bowl, add the carrots, cumin and drizzle of EVOO and toss to combine. Transfer them to the baking tray and pop them into the oven for 35 minutes
  • To make the dip, add the dip ingredients to a blender and blitz until smooth
  • Spread the feta dip onto a shallow plate and top it with the carrots once cooked through. Sprinkle over the parsley and mint on top and a drizzle of honey
  • Serve and enjoy!
