Spicy Beef Bowls with Coconut Broth

There have been so many brothy bowls floating around on the gram I had to try one myself. This is absolutely amazing. Approved by the husband too 😂

What you will need:

  • 1 Cup of uncooked rice
  • 2 Cups of water
  • 1 Tbsp of EVOO
  • 500g Beef mince
  • 1 Red capsicum, diced
  • 1 Onion, diced
  • 2 Garlic cloves, minced
  • 2 Tbsp of soy sauce
  • 1 Tbsp of rice vinegar
  • 2 Tbsp of honey
  • 1 Tbsp of chilli crisp
  • 1/2 Tsp of ginger powder
  • 1/4 Cup of beef broth


Broth:

  • 1 Can of coconut milk (500ml)
  • 1 Tbsp of soy sauce
  • 1 Tbsp of chilli crisp
  • 1/2 Tsp of ginger powder

Method

  • Start by cooking the rice as per packet instructions and set aside
  • Heat the oil in a large fry pan over medium-high heat. Add the capsicum, onion and garlic and cook until softened. Add the beef mince and cook, breaking it up as it browns
  • Add in the soy sauce, rice vinegar, honey, chilli crisp ginger and beef stock and stir through. Reduce the heat and allow everything to simmer for a few minutes so the flavours come together
  • For the broth, add the coconut milk, soy sauce, chilli crisp and ginger to a saucepan. Bring to a gentle simmer, stirring to combine
  • Spoon the rice into bowls and top with the beef mixture. Pour the warm coconut broth over the top and garnish with some diced cucumber and an extra spoonful of chilli crisp if desired
  • Serve and enjoy!
