What you will need:
- Rice paper sheets, cut into triangles
- Raw prawns with the tails on
- Vegetable oil
- Kewpie sriracha
- Fresh lime
Method
- Start by cutting the rice paper sheets into triangles
- Place a raw prawn onto each rice paper triangle, leaving the tail exposed so it can be used to hold onto later on. Add another rice paper triangle over the top and press down to secure it
- Heat some vegetable oil in a deep saucepan over medium-high heat until hot
- Carefully lower the prawn crackers one at a time into the oil and fry until the rice paper puffs up and becomes crisp and golden and the prawns are cooked through
- Remove and place on a paper towel lined plate to drain and repeat until all crackers are cooked
- Transfer to your serving plate
- Serve with some kewpie sriracha and fresh lime wedges and enjoy!
