Roasted Zucchini w/ ricotta and hot honey 🤤 A very simple brunch on rotation in this house 👏🏽

What you will need:
- 2 Zucchinis, thinly sliced
- Smooth ricotta
- Hot honey
- Tajin
- EVOO
- 2 Slices of sourdough
- Airfryer
Method
- Place the thinly sliced zucchini on a baking sheet and drizzle over some EVOO and sprinkle of tajin
- Add the baking sheet into your air fryer on 160°C for 10mins
- While the zucchini is in the air fryer, lightly toast your sourdough slices and then spread on some smooth ricotta
- Once the zucchini is cooked, layer the slices on top of the ricotta and drizzle over some hot honey
- Serve and enjoy!
