Move over traditional potato salad. I can’t tell you how good this is. Made with Potato Gems (yes you heard me correctly) and from this point moving forward I will never make the basic potato salad again.

Prep: 5 mins | Cook time: 20 mins | Serves: 1
What you will need:
- 1 Small packet of potato gems
- A handful of Chives, chopped
- A handful of Dill, chopped
- A handful of Parsley, chopped
- 1 Cucumber, roughly chopped
- 1 Red onion, diced
- 1 Garlic clove, crushed
- 1 Tsp dijon mustard
- 1 Tsp wholegrain mustard
- 1/4 Cup greek yogurt
- 1/4 Cup kewpie mayo
- Salt & Pepper
- Juice of 1 lemon
Method
- Preheat your oven to 200°C, line a baking tray with baking paper and lay the potato gems in a single layer and place them into the oven for 10 mins
- Pull the potato gems out, squish them down and sprinkle some salt over the top and place them back into the oven for a further 10 mins or until crispy
- In a large bowl, add all the remaining ingredients and stir to combine
- Once the potato gems are nice and crispy, remove them from the oven, allow them to cool slightly and then stir them through the mixture
- Serve and enjoy!
