Pesto Orzo with Burrata

The most simple dinner that’s so delicious and is now on rotation. You could easily add any protein or remove the peas if the kids are fussy.

What you will need:

  • 1 Tbsp EVOO
  • 2-3 Cloves of garlic, crushed 
  • 1 Tsp Italian seasoning
  • 1 Cup orzo
  • 3 Cups vegetable broth 
  • 1 Cup frozen peas
  • A handful of baby spinach
  • 1/3 Cup pesto
  • Burrata ball
  • Juice of 1 lemon
  • Pepper to taste

 

Method

  • Start by heating up the EVOO in a pot. Add in the garlic and orzo and stir through until coated
  • Sprinkle in the Italian seasoning and vegetable broth. Bring it to a boil and then lower it to a simmer until the orzo is cooked al dente (approx 8-10mins)
  • Add in the frozen peas, baby spinach, lemon juice and pesto and stir through until the spinach has wilted
  • Transfer to a serving plate at top with a burrata ball, sliced open, and sprinkle some pepper to taste
  • Serve and enjoy!
