One pan chicken korma bake 👌🏼 One pan everything for the win. This dish packed a punch and was SO easy to make.
Prep: 5 mins | Cook time: 55 mins | Serves: 4
What you will need:
- 200g of washed basmati rice
- 4 tbsp korma curry paste
- 1 sliced red onion
- 2 diced garlic
- 1 tin of coconut milk
- 4 chicken thighs
- Olive oil
- 2 tsp of mild curry powder
- 2 tsp of caster sugar
- 2 tsp of cumin
- 150 – 200 ml of chicken stock
Method
- In a large oven dish, add your washed rice and your korma curry paste on top
- Add red onion, garlic, coconut milk and stir
- Add your chicken thigh on top of the rice and drizzle with olive oil, curry powder cumin, chicken stock & sugar
- Cover with foil and pop it into the oven for 45 min on 180 °C.
- Remove foil and place it back in the oven for a further 10 mins on 180 °C to brown up
- Sprinkle some coriander on top
- Add dollops of natural yogurt with chopped mint on top and serve with poppadoms
