Perfectly paired with this chicken enchilada bowl, this is a family favourite and cooked in under 15 mins!

What you will need:
- 1 Bag of cauliflower rice
- Juice of 1 lime
- 4 Cloves garlic, crushed
- 1 Cup coriander, chopped
- 400g Chicken tenders, chopped
- Taco seasoning
- Salsa
- Grated cheese
- Sour cream
- Guacamole
- EVOO
Method
- Start by heating some EVOO in a pan and adding in the chopped chicken tenders. Sprinkle over a packet of the taco seasoning and stir to coat all the pieces. Once chicken has cooked through, remove and set aside
- Give your pan a wipe down and add some more EVOO, once heated, add the cauliflower rice and allow to fry for a minute or two before adding the lime juice, crushed garlic and coriander. Stir to combine and allow to fry up for a further minute. Remove and transfer to serving plate
- Add all remaining ingredients to your bowl
- Serve and enjoy!
