Mexican Cauliflower Rice

Perfectly paired with this chicken enchilada bowl, this is a family favourite and cooked in under 15 mins!

Prep: 10 mins | Cook time: 10 mins | Serves: 2

 

What you will need:

  • 1 Bag of cauliflower rice
  • Juice of 1 lime
  • 4 Cloves garlic, crushed
  • 1 Cup coriander, chopped
  • 400g Chicken tenders, chopped 
  • Taco seasoning 
  • Salsa
  • Grated cheese
  • Sour cream
  • Guacamole
  • EVOO

 

 Method

  • Start by heating some EVOO in a pan and adding in the chopped chicken tenders. Sprinkle over a packet of the taco seasoning and stir to coat all the pieces. Once chicken has cooked through, remove and set aside
  • Give your pan a wipe down and add some more EVOO, once heated, add the cauliflower rice and allow to fry for a minute or two before adding the lime juice, crushed garlic and coriander. Stir to combine and allow to fry up for a further minute. Remove and transfer to serving plate
  • Add all remaining ingredients to your bowl
  • Serve and enjoy!
