Whipped Feta with Greek Salad! I’ve realized that lately most of my dishes have some sort of whipped cheese or yoghurt base. This is a great way to serve a Greek Salad and a little bit fancy for when you have guests over. Please try this x

Prep: 10 mins | Serves: 2-3
What you will need:
- EVOO
- 1 Tbsp red wine vinegar
- A sprinkling of oregano
- 1 handful of mint leaves
- Salt to taste
- 1/2 Red onion, finely sliced
- 2-3 Medium tomatoes, roughly chopped
- 1 Large Lebanese cucumber, roughly chopped
- A handful of kalamata olives
Whipped Feta
- 200g Feta
- A squeeze of lemon
- 2-3 Tbsp ice water
Method
- Start by adding the whipped feta ingredients into a food processor and blitz until smooth and creamy. Set aside
- In a large mixing bowl, add the EVOO, oregano, red wine vinegar and onions and stir until the onions are coated. Allow to sit for 5 mins before adding the remaining salad ingredients and mixing them through
- Spread the whipped feta over your serving plate and top with the salad
- Add a mint flower on top to garnish
- Serve and enjoy!
