What you will need:

  • 500g Raw prawns, peeled and deveinedĀ 
  • Smoked paprika
  • Sweet paprika
  • Dried basil
  • Plain flour
  • 2 Cups of spinach, diced
  • 2 Tbsp butter
  • 2 Tbsp garlic, minced
  • 2 Cups of vegetable broth
  • 1 Cup of heavy cream
  • 1 Cup of parmesan cheese
  • Italian seasoning
  • SaltĀ 
  • Pepper
  • 1.5 Tbsp sun-dried tomato oil
  • 2.5 Tbsp tomato paste
  • A handful of basil, roughly chopped
  • Pasta of your choice


Method

  • Start by cooking your pasta as per packet instructions. Drain and set aside
  • Add the prawns to a bowl with a sprinkle of smoked paprika, Italian seasoning, salt and pepper. Toss to combine until coated all over.Ā 
  • Heat up the sun-dried tomato oil in a large pan and cook the prawns for about 2 minutes on each side until pink and opaque. Set aside to cool
  • Melt the butter in the same pan on medium-low heat. Add the garlic, onion, sun-dried tomatoes, tomato paste, a sprinkle of Italian seasoning, sweet paprika, salt and dried basil. Cook for a few minutes until fragrant
  • Stir through the flour and then add the vegetable broth, cream and spinach. Cook for approximately 5 minutes, stirring occasionally, until spinach has wilted and sauce has thickened
  • Add in the parmesan cheese and stir until melted through
  • Carefully stir the prawns and pasta through the sauceĀ 
  • Garnish with some fresh basil
  • Serve and enjoy!
