Prep: 5 mins | Cook time: 30 mins | Serves: 4-6
What you will need:
- 500g Raw prawns, peeled and deveinedĀ
- Smoked paprika
- Sweet paprika
- Dried basil
- Plain flour
- 2 Cups of spinach, diced
- 2 Tbsp butter
- 2 Tbsp garlic, minced
- 2 Cups of vegetable broth
- 1 Cup of heavy cream
- 1 Cup of parmesan cheese
- Italian seasoning
- SaltĀ
- Pepper
- 1.5 Tbsp sun-dried tomato oil
- 2.5 Tbsp tomato paste
- A handful of basil, roughly chopped
- Pasta of your choice
Method
- Start by cooking your pasta as per packet instructions. Drain and set aside
- Add the prawns to a bowl with a sprinkle of smoked paprika, Italian seasoning, salt and pepper. Toss to combine until coated all over.Ā
- Heat up the sun-dried tomato oil in a large pan and cook the prawns for about 2 minutes on each side until pink and opaque. Set aside to cool
- Melt the butter in the same pan on medium-low heat. Add the garlic, onion, sun-dried tomatoes, tomato paste, a sprinkle of Italian seasoning, sweet paprika, salt and dried basil. Cook for a few minutes until fragrant
- Stir through the flour and then add the vegetable broth, cream and spinach. Cook for approximately 5 minutes, stirring occasionally, until spinach has wilted and sauce has thickened
- Add in the parmesan cheese and stir until melted through
- Carefully stir the prawns and pasta through the sauceĀ
- Garnish with some fresh basil
- Serve and enjoy!
