Lemon Cake


You will almost never see me cooking with lemon as the star of the dish but this cake stopped me mid scroll! 4 ingredients for the most moist cake.

Prep: 10 mins | Cook time: 45 mins | Serves: 12

What you will need:

  • 3 large eggs
  • 1 cup sweetened condensed milk
  • 1 cup self-rising flour
  • 4 tbsp. fresh lemon juice + 2 tsp lemon zest

Lemon glaze

  • 1 cup powdered sugar
  • 1-2 tbsp lemon juice until glaze comes to desired consistency



  • Preheat oven to 160 °C and line a baking tray with baking paper
  • In a medium bowl, whisk together the eggs and condensed milk. Once combined, add in the flour and whisk until there are no lumps
  • Add the lemon juice and lemon zest into the mix and gently stir until combined
  • Pour the batter into the pan and pop it into the oven for 45 minutes or until the cake is done (the top of the cake should bounce back when pressed lightly or you can stick in a toothpick and it should come out clean)
  • While the cake is cooling down, combine the powdered sugar with the lemon juice slowly until the glaze comes to a desired consistency and then pour it over the cake to add some sweetness to it
