The whipped ricotta is like eating a cloud and my bet is this would be even better served with some crusty bread 🥖

What you will need:
- 500g Marinated peppers
- A handful of basil, roughly chopped
- A handful of chives, chopped
- 1 Packet of prosciutto
- 3 Tbsp pesto
- 1 Tub of smooth ricotta
- 2 Tbsp EVOO
- Salt & Pepper
- A squeeze of lemon

 Method
- Start by adding the tub of smooth ricotta, EVOO, salt and pepper and the lemon juice to a food processor and blitz until smooth and creamy. Set aside
- Add the marinated peppers to a bowl and sprinkle over the basil, chives and pesto and mix through
- Transfer to one side of your serving platter and spoon the whipped ricotta on the other side of the plate and drizzle over some EVOO
- Top with the prosciutto, sprinkle some salt and pepper over the top to taste
- Serve and enjoy!
