Satay Chicken & Quinoa Bowls

What you will need:

  • 500g Chicken thigh fillets, quartered
  • 200g green beans, trimmed
  • 1 Tsp sesame oil
  • 1 Tsp fish sauce
  • 4 Radishes, thinly sliced
  • Juice of 1 lime
  • 1/2 Tsp ground tumeric
  • 1 Bag of 90 sec microwave brown rice and quinoa 
  • 1/3 Cup almond spread
  • 1 Tbsp soy sauce
  • 165g Coconut milk
  • 1/4 Cup roasted almonds, roughly chopped
  • 1 Tbsp lemongrass paste
  • 1 garlic clove, crushed
  • 2 Tbsp fresh coriander leaves




      • Add the chicken thigh fillets, fish sauce, lime juice, turmeric, almond spread, soy sauce, coconut milk, lemongrass paste and crushed garlic to a large mixing bowl and stir until coated and combined
      • Heat the sesame oil in a pan and add the chicken pieces, turning over occasionally until cooked through
      • Heat up the 90 second rice and quinoa bag and then transfer to your serving plates with the green beans and sliced radishes 
      • Once chicken is cooked, transfer to serving plates, garnish with the coriander leaves and chopped almonds 
      • Serve and enjoy!
