Healthy Mexican Prawn Salad

What you will need:
- 1/2 Red cabbage, thinly chopped
- 1 Tin of corn kernels
- 1 Tbsp of butter
- Tajin
- 1 Red chilli, thinly sliced
- 1 Red onion, thinly sliced
- 1 Packet of raw prawns
- 1 Cup of greek yogurt
- 1 Tbsp mayonnaise
- Sriracha
- Salt and pepper
- Juice of 1 lime
- A handful of coriander, chopped
Method
- Start by melting the butter in a pan over medium heat and then add in the corn kernels, sprinkle over some tan and allow to char. Remove from pan and set aside
- Using the same pan, add in the prawns with another sprinkle of tajin and cook for approximately 2 minutes on each side or until they have turned orange. Remove and set aside
- In a small bowl, add in the yoghurt, mayonnaise, a generous drizzle of sriracha, a sprinkle of paprika, salt and pepper to taste and the lime juice. Stir through until combined and set aside
- Add the corn, red cabbage, red onion, coriander and prawns to your serving bowl
- Drizzle the dressing over the top and mix the salad through
- Serve and enjoy!
