Healthy Mexican Prawn Salad

What you will need:

  • 1/2 Red cabbage, thinly chopped
  • 1 Tin of corn kernels 
  • 1 Tbsp of butter
  • Tajin
  • 1 Red chilli, thinly sliced
  • 1 Red onion, thinly sliced
  • 1 Packet of raw prawns
  • 1 Cup of greek yogurt
  • 1 Tbsp mayonnaise
  • Sriracha
  • Salt and pepper 
  • Juice of 1 lime
  • A handful of coriander, chopped 


Method

  • Start by melting the butter in a pan over medium heat and then add in the corn kernels, sprinkle over some tan and allow to char. Remove from pan and set aside
  • Using the same pan, add in the prawns with another sprinkle of tajin and cook for approximately 2 minutes on each side or until they have turned orange. Remove and set aside
  • In a small bowl, add in the yoghurt, mayonnaise, a generous drizzle of sriracha, a sprinkle of paprika, salt and pepper to taste and the lime juice. Stir through until combined and set aside
  • Add the corn, red cabbage, red onion, coriander and prawns to your serving bowl
  • Drizzle the dressing over the top and mix the salad through
  • Serve and enjoy!
