Creamy Chicken Orzo

Creamy Chicken Orzo 🤤 Hands down a delicious family meal that everyone will enjoy.

What you will need:

  • 1 Chicken breast, diced
  • 1 Tbsp EVOO
  • 3 Garlic cloves, minced
  • 1 Onion, finely chopped
  • 1/2 Tsp chilli flakes
  • 1/2 Tsp onion powder
  • 1 Tsp Italian seasoning
  • 1 Tsp Paprika
  • 1/2 Tsp dried oregano
  • 1 Tbsp butter
  • Salt & Pepper, to taste
  • 1 Cup dry orzo pasta
  • 6-7 Cherry tomatoes, halved
  • 2 Tbsp tomato paste
  • 1/2 Cup chicken stock
  • 1/2 Cup thickened cream
  • 1/4 Cup Parmesan cheese, grated
  • A Hand full of spinach
  • Fresh parsley, chopped 


Method

  • Start by heating up some EVOO in a pan and add in the diced chicken breast
  • Sprinkle over the Italian seasoning, chilli flakes, onion powder, paprika, dried oregano and minced garlic and stir through to coat the chicken. Once chicken has cooked through, remove from the pan and set aside
  • Using the same pan, add in the butter and onions and stir occasionally until caramelised
  • Add in the cherry tomatoes, tomato paste, salt and pepper and stir through for a minute. Add in the orzo pasta and stir to combine
  • Add in the chicken stock and bring to a boil. Lower to a simmer for 10mins until orzo is cooked and the stock has absorbed
  • Add in the thickened cream and parmesan cheese and stir through
  • Add in the spinach and reserved chicken and stir until spinach has wilted, approximately 1 minute
  • Sprinkle some chopped parsley over the top to garnish with some parmesan cheese
  • Serve and enjoy!
