Healthy Breakfast Quiche

Delicious “healthy” breakfast quiche. You could easily add a layer of ham or some bacon to this recipe. Brb while I work on my presentations skills for a quiche 😂🙏🏻

Prep: 15 mins | Cook time: 30 mins | Serves: 2-4

 

What you will need:

  • 1 Garlic clove, crushed
  • 1/2 Brown onion, diced finely
  • 1 Tbsp of EVOO
  • 2 Bags of frozen spinach, defrosted and excess water squeezed out
  • 1 Sheet of puff pastry
  • Butter, melted
  • Jarlsberg cheese
  • 3 Eggs
  • Salt and Pepper
  • 1/4 Cup cooking cream
  • 1 Bunch of asparagus
  • Parmesan cheese

 

Method

  • Start by preheating your oven to 180°C, line a baking pan with baking paper and set aside
  • In a small bowl, whisk the eggs and cream together with a sprinkle of salt and pepper and set aside
  • Heat up the EVOO in a pan over medium heat and cook the garlic and onion until soft and translucent, approx 2-3 mins
  • Add the spinach and stir to combine until heated through
  • Place your puff pastry sheet on top of the baking paper inside the baking pan and pierce the pastry with a fork and then brush over with the melted butter
  • Add the cooked spinach as your bottom layer and top it with the Jarlsberg cheese 
  • Pour in the whisked eggs and then layer the asparagus stalks over the top
  • Sprinkle over some parmesan cheese and then pop it into the oven for 30 mins
  • Serve and enjoy!
