Prep: 15 mins | Cook time: 30 mins | Serves: 2-4
What you will need:
- 1 Garlic clove, crushed
- 1/2 Brown onion, diced finely
- 1 Tbsp of EVOO
- 2 Bags of frozen spinach, defrosted and excess water squeezed out
- 1 Sheet of puff pastry
- Butter, melted
- Jarlsberg cheese
- 3 Eggs
- Salt and Pepper
- 1/4 Cup cooking cream
- 1 Bunch of asparagus
- Parmesan cheese
Method
- Start by preheating your oven to 180°C, line a baking pan with baking paper and set aside
- In a small bowl, whisk the eggs and cream together with a sprinkle of salt and pepper and set aside
- Heat up the EVOO in a pan over medium heat and cook the garlic and onion until soft and translucent, approx 2-3 mins
- Add the spinach and stir to combine until heated through
- Place your puff pastry sheet on top of the baking paper inside the baking pan and pierce the pastry with a fork and then brush over with the melted butter
- Add the cooked spinach as your bottom layer and top it with the Jarlsberg cheese
- Pour in the whisked eggs and then layer the asparagus stalks over the top
- Sprinkle over some parmesan cheese and then pop it into the oven for 30 mins
- Serve and enjoy!
