Easy Udon Noodles

What you will need:

  • 3 Large zucchinis
  • 11/2 Tsp white miso
  • 2 Tbsp boiling water
  • 1 Tbsp sesame oil
  • 2 Tsp soy sauce
  • 2 Tsp rice wine vinegar
  • 3 Tsp sugar
  • A splash of dark soy
  • 1 Tsp freshly grated ginger
  • 1 Garlic clove, crushed
  • 2-3 Tsp of your favourite chilli oil

To garnish:

  • Sesame seeds
  • Fried shallots
  • A handful of spring onions, chopped


  • Start by cooking your udon noodles as per packet instructions and set aside
  • In a bowl, add the miso and boiling water and stir to combine until it looks like a paste
  • Combine all the remaining ingredients into the bowl and then add in your udon noodles
  • Garnish with a sprinkle of sesame seeds, fried shallots and spring onions
  • Serve and enjoy!
