You know how much I loved the croissant bake I made in the past so I had to try these Cheese and Bacon Croissant Puffs 🥐 Wow these were delicious, perfect for school lunches too! Do these immediately!!
Prep: 10 mins | Cook time: 25 mins | Serves: 12
What you will need:
- 2 tsp olive oil
- 200g streaky bacon rashers, cut into 1cm pieces
- 150g pkt mini croissants, cut into 1 cm thick slices
- 4 eggs
- 300ml thickened cream
- 1½ cups pre- grated 3 cheese blend
- 1 tbsp chopped fresh chives
Method
- Preheat oven to 190°C and grease a muffin tray
- Chop your croissants in to thin slices and dice bacon in to 1cm pieces
- Heat up the oil in a large frying pan over a medium heat and fry up the bacon. Once bacon is cooked through, add in the croissant chunks and stir until golden
- In a large bowl, whisk up the eggs and cream and add S&P to taste
- Add the croissant and bacon mixture to the bowl with eggs and cream and stir to combine. Add in the chives and cheese blend into the mix.
- Divide the mixture in to your muffin tray and bake for 15-20mins or until golden
