Creamy Fennel, Apple and Almond Slaw by the amazing @courtneyroulston might just be my new fav side for Xmas. I swapped out the Dijon Mustard for Capers because I didn’t have any. Still delicious x

Prep: 15 mins | Serves: 4-6
What you will need:
- 2 Fennel bulbs, shaved
- 5 Celery stalks, thinly diced
- 1 Green apple, finely sliced
- 1/2 cup Parsley, chopped

1/3 cup Whole roast almonds
Dressing:
- 2 tablespoons mayonnaise
- 1 Heaped tbsp sour cream
- Sea salt and pepper to taste
- 1 Heaped tsp Dijon mustard (I used capers instead)
- Juice and zest 1/2 big lemon
- 1 Tsp honey
Method
- Start by adding all the dressing ingredients into a small bowl and mix through until smooth
- In a large salad bowl, add the fennel, celery, apple, parsley and almonds
- Toss the dressing through the salad
- Serve and enjoy!
