Creamy Fennel, Apple and Almond Slaw

Creamy Fennel, Apple and Almond Slaw by the amazing @courtneyroulston might just be my new fav side for Xmas. I swapped out the Dijon Mustard for Capers because I didn’t have any. Still delicious x

Prep: 15 mins | Serves: 4-6


What you will need:

  • 2 Fennel bulbs, shaved
  • 5 Celery stalks, thinly diced
  • 1 Green apple, finely sliced 
  • 1/2 cup Parsley, chopped
  • 1/3 cup Whole roast almonds

Dressing:

  • 2 tablespoons mayonnaise 
  • 1 Heaped tbsp sour cream
  • Sea salt and pepper to taste
  • 1 Heaped tsp Dijon mustard (I used capers instead)
  • Juice and zest 1/2 big lemon
  • 1 Tsp honey

 

Method

  • Start by adding all the dressing ingredients into a small bowl and mix through until smooth
  • In a large salad bowl, add the fennel, celery, apple, parsley and almonds 
  • Toss the dressing through the salad
  • Serve and enjoy!
