Creamy Garlic Prawn Pasta

Prep: 5 mins | Cook time: 15 mins| Serves: 4


What you will need:

  • 250g Fettuccini or pasta of your choice
  • 2 Tbsp Butter
  • 300g Raw peeled prawns
  • 3 Garlic cloves, minced
  • 65ml Dry white wine
  • 250ml Thickened cream
  • 125ml Chicken broth
  • 50g Parmesan cheese
  • A handful of parsley, finely chopped
  • Salt and Pepper


Method

  • Start by cooking pasta as per packet instructions, reserve 1/4 cup pasta water, drain and set aside
  • Melt 1 Tbsp butter in a large pan over medium high heat. Add the prawns and cook for 1-2 mins on each side until just cooked through. Remove the prawns
  • In the same pan, melt 1 Tbsp butter and then add the garlic, stirring for 20 seconds until fragrant
  • Stir in the wine and allow to simmer for 2 mins
  • Add the cream, chicken broth and parmesan cheese and stir until the cheese has melted. Allow to simmer for 2 mins 
  • Add the prawns back in to the pan along with the pasta and about 1/4 cup of the pasta water
  • Toss the pasta for a minute until sauce thickens and then remove the pan from the heat. 
  • Sprinkle over some parsley and some salt and pepper to taste
  • Serve and enjoy!
