Prep: 5 mins | Cook time: 15 mins| Serves: 4
What you will need:
- 250g Fettuccini or pasta of your choice
- 2 Tbsp Butter
- 300g Raw peeled prawns
- 3 Garlic cloves, minced
- 65ml Dry white wine
- 250ml Thickened cream
- 125ml Chicken broth
- 50g Parmesan cheese
- A handful of parsley, finely chopped
- Salt and Pepper
Method
- Start by cooking pasta as per packet instructions, reserve 1/4 cup pasta water, drain and set aside
- Melt 1 Tbsp butter in a large pan over medium high heat. Add the prawns and cook for 1-2 mins on each side until just cooked through. Remove the prawns
- In the same pan, melt 1 Tbsp butter and then add the garlic, stirring for 20 seconds until fragrant
- Stir in the wine and allow to simmer for 2 mins
- Add the cream, chicken broth and parmesan cheese and stir until the cheese has melted. Allow to simmer for 2 minsÂ
- Add the prawns back in to the pan along with the pasta and about 1/4 cup of the pasta water
- Toss the pasta for a minute until sauce thickens and then remove the pan from the heat.Â
- Sprinkle over some parsley and some salt and pepper to taste
- Serve and enjoy!
