Zucchini Ricotta Lasagna

Prep: 15 mins | Cook time: 25 mins | Serves: 4-6

 

What you will need:

  • 3 Large zucchinis
  • 1 Cup ricotta cheese
  • Napolitana sauce 
  • Mozzarella cheese
  • Salt and Pepper

 Method

  • Preheat your oven to 180°C, add a thin layer of Napoletana sauce to a casserole dish and set aside
  • Peel the zucchinis and slice thinly, lengthways 
  • In a medium sized bowl, add the ricotta cheese and 1/4 cup of mozzarella cheese, some sale and pepper and stir through to combine
  • Spread the ricotta mixture over the zucchini slices, dollop some Napoletana sauce on top with a sprinkle of mozzarella cheese and roll them up
  • Place the rolls into your casserole dish, standing up
  • Sprinkle a little more mozzarella cheese on top and place the dish into the oven for 25 mins 
  • Serve and enjoy!
