One Pan Creamy Salmon Risoni

One pan creamy salmon risoni 🤤 I saw this delicious recipe over at @jshealth and wow did this live up to my expectations.

Prep: 15 mins | Cook time: 25 mins | Serves: 2-3

 

What you will need:

  • 300g Salmon
  • EVOO
  • 1 Leek, finely diced
  • A handful of parsley stalks, finely diced
  • A handful of spring onion, finely diced
  • 2 Cloves of garlic, crushed
  • 1 Cup risoni
  • 3 Cups vegetable stock 
  • 1/2 Cup frozen peas
  • 1/2 Head broccoli florets, finely chopped
  • 2 Tbsp cream cheese
  • 1/2 Lemon, juiced and zested
  • 1 Tbsp capers
  • Parmesan cheese

Method

  • Start by placing your salmon into the air fryer on 180°C for 20 mins
  • Add a drizzle of EVOO to a pan and add the parsely stalk, spring onion, leek, garlic, risoni and vegetable stock. Pop a lid on and bring it to the boil and then reduce to a simmer for 5 mins
  • Add the broccoli and frozen peas and simmer for a further 5 mins or until the risoni has cooked through
  • Add the cream cheese and stir through until combined
  • Place the salmon fillets on top and grate the lemon zest over the top along with a squeeze of lemon
  • Sprinkle over some capers and parmesan cheese 
  • Serve and enjoy!
