One pan creamy salmon risoni 🤤 I saw this delicious recipe over at @jshealth and wow did this live up to my expectations.

Prep: 15 mins | Cook time: 25 mins | Serves: 2-3
What you will need:
- 300g Salmon
- EVOO
- 1 Leek, finely diced
- A handful of parsley stalks, finely diced
- A handful of spring onion, finely diced
- 2 Cloves of garlic, crushed
- 1 Cup risoni
- 3 Cups vegetable stock
- 1/2 Cup frozen peas
- 1/2 Head broccoli florets, finely chopped
- 2 Tbsp cream cheese
- 1/2 Lemon, juiced and zested
- 1 Tbsp capers
- Parmesan cheese
Method
- Start by placing your salmon into the air fryer on 180°C for 20 mins
- Add a drizzle of EVOO to a pan and add the parsely stalk, spring onion, leek, garlic, risoni and vegetable stock. Pop a lid on and bring it to the boil and then reduce to a simmer for 5 mins
- Add the broccoli and frozen peas and simmer for a further 5 mins or until the risoni has cooked through
- Add the cream cheese and stir through until combined
- Place the salmon fillets on top and grate the lemon zest over the top along with a squeeze of lemon
- Sprinkle over some capers and parmesan cheese
- Serve and enjoy!
