My special occasion dish! Delicious lamb cutlets and a traditional Greek Salad. Tiny bit more effort, but well worth it for a celebration!
Prep: 15 mins | Cook time: 45 mins | Serves: 4
What you will need:
- 2x Potatoes, sliced finely
- 2x Zucchinis, roughly chopped
- EVOO
- Salt and Pepper
- Garlic salt
Marinade:
- 3/4 Bunch of mint, chopped finely
- 1 Tbsp seeded mustard
- A drizzle of honey
Greek Salad:
- 3 Different coloured capsicums, chopped
- 1 Cucumber, cut in half moons
- 2 Tomatoes, roughly chopped
- 1 Red onion, chopped finely
- Salt and Pepper
- Oregano
- Balsamic vinegar
- EVOO
- Block of feta
Method
- Preheat your oven to 180 °C and line a baking pan with baking paper
- Add the marinade ingredients to a bowl, stir through and set aside
- Add the potatoes and zucchini to the oven pan, drizzle with EVOO, season with salt and pepper and garlic salt and bake for 30 mins
- To prepare the salad, add all the ingredients in, except for the feta, into a bowl, season with salt and pepper with a drizzle of EVOO and balsamic vinegar and a sprinkle of oregano. Add the block of feta on top or if you prefer you can crumble it over. Add another drizzle of EVOO and sprinkle of oregano and set aside
- Heat up 2 Tbsp of EVOO in a pan until hot and then add the cutlets and sear on both sides for approx 1 minute until browned
- Transfer the cutlets into the oven pan on top of the veggies and spoon some of the marinade on top of the cutlets and the veggies. Pop the pan back in to the oven for about 10-12 minutes
- Plate the cutlets, veggies and salad and enjoy!
