Anything with Halloumi and I’m a big yes from me!
Prep: 10 mins | Cook time: 10 mins | Serves: 4-6
What you will need:
- 1 Cup pearl cous cous
- 1 Tbsp butter
- 1 Punnet of tomato medley, halved
- 1/2 Cucumber, chopped
- 1 Tbsp EVOO
- 1 Packet of halloumi, sliced
- 1 Container of hummus
- 1/4 Cup thyme leaves
Dressing:
- EVOO
- Dijon mustard
- Salt & Pepper
- A squeeze of lemon
Method
- Cook the cous cous as per packet instructions, drain and stir through the butter and transfer to your serving bowl with a drizzle of the dressing over the top and set aside
- Add the tomatoes and cucumbers and mix through to combine
- Heat up the EVOO in a pan until it is nice and hot, add the halloumi slices and cook until golden on each side
- Add the halloumi slices on top of the salad, spoon some hummus on the side of the halloumi
- Sprinkle the thyme leaves over the top and drizzle over some more of the dressing
- Serve and enjoy!
