Chicken Caesar Nachos

 Trying the viral chicken caesar nachos. This was so delicious, next time I’m 100% using a bbq to save cooking time.

Prep: 10 mins | Cook time: 24 minutes | Serves: 4

 

What you will need:

  • 2 Chicken breast fillets, sliced thinly (or you could use shredded bbq chicken)
  • 2 Tbsp Moroccan seasoning
  • 1 Tbsp EVOO
  • 1 Bag of lightly salted corn chips
  • 1 Cup grated mozzarella
  • 1 Cup grated parmesan + 1/2 Cup reserved
  • 1/3 Cup spring onions, diced
  • 1 Cos lettuce, shredded
  • 1/2 Cup caesar dressing

Method

  • Start by preheating your oven to 180°C and line a baking tray with baking paper and set aside
  • Place the chicken breast fillets into a bowl, sprinkle over some moroccan seasoning and drizzle some EVOO on top. Toss well to coat
  • Place the fillets into an air fryer for 12 minutes on  180 °C. Once cooked, pull them out and cut them into bite sized pieces
  • Spread the corn chips on the baking tray and layer the mozzarella on top followed by the chicken and then sprinkle over the parmesan cheese and spring onions. Place the baking tray into the oven for 12 minutes
  • In the meantime, place the shredded lettuce into a bowl with the Cesar dressing and reserved parmesan. Toss well to coat
  • Remove the nachos from the oven and transfer to a serving plate and top with the Caesar salad 
  • Serve and enjoy!
