Asparagus with Pesto & Burrata 🤤 At this point I should have shares in Burrata, but honestly when I see a recipe with it I have to make it. This was so delicious and perfect as a side for your next event.

What you will need:
- 1x Bunch asparagus
- 1x Clove of crushed garlic
- 20g Rocket/ Arugula, washed
- 40g Olive oil
- 30g Hazelnuts, toasted (plus more roughly chopped for garnish)
- 20g Parmesan
- Juice of half a small lemon
- 1x Ball of burrata
Method
- Blanch your asparagus in a pot over high heat for 3-4 minutes and then drain and set aide
- To make the pesto, add the rocket, basil, garlic, lemon juice, hazelnuts, parmesan and olive oil to a blender and blitz until smooth
- Spoon the pesto on to your serving plate, top it with the asparagus, sprinkle some extra rocket over the top and then burst your burrata ball to dollop all over
- Season with S&P and sprinkle some hazelnuts on top to garnish
- Serve & Enjoy!
