Asparagus, Pesto and Burrata Side

 


Asparagus with Pesto & Burrata 🤤 At this point I should have shares in Burrata, but honestly when I see a recipe with it I have to make it. This was so delicious and perfect as a side for your next event.

Prep: 5 mins | Cook time: 5 mins | Serves: 4

What you will need:

  • 1x Bunch asparagus
  • 1x Clove of crushed garlic
  • 20g Rocket/ Arugula, washed
  • 40g Olive oil
  • 30g Hazelnuts, toasted (plus more roughly chopped for garnish)
  • 20g Parmesan
  • Juice of half a small lemon
  • 1x Ball of burrata

Method

  • Blanch your asparagus in a pot over high heat for 3-4 minutes and then drain and set aide
  • To make the pesto, add the rocket, basil, garlic, lemon juice, hazelnuts, parmesan and olive oil to a blender and blitz until smooth
  • Spoon the pesto on to your serving plate, top it with the asparagus, sprinkle some extra rocket over the top and then burst your burrata ball to dollop all over
  • Season with S&P and sprinkle some hazelnuts on top to garnish
  • Serve & Enjoy!
