Asian Spiced Lemongrass Pork Lettuce Cups. That’s a mouthful and so is this delicious dish! Healthy, tasty and super quick to make!

What you will need:
- 6 Slices of ginger
- 2 Garlic cloves
- 2 Lemongrass stalks, chopped
- 2 Chillies
- 1/2 Red onion
- 4 Kaffir lime leaves
- 1 Tbsp EVOO
- 500g Pork mince
- Iceberg lettuce cups
- 2 Tbsp red wine vinegar
- 1 Tbsp fish sauce
- 1 Tbsp brown sugar
- 1 Cucumber, sliced thinly
- A handful of spring onion, chopped
- A handful of coriander leaves
Method
- Start by adding the ginger, garlic cloves, lemongrass, chillies, red onion and kaffir lime leaves to a blender/food processor and blitz until combined
- Add the EVOO to a pan and heat up on high heat. Add the blitzed mixture to the pan and allow to heat up for 1 minute before adding in the pork mince.
- Stir to combine and then add the red wine vinegar, fish sauce and brown sugar. Allow to cook through until slightly crispy.
- Spoon the mixture into the lettuce cups
- Top with some cucumber slices and sprinkle over some spring onion and coriander leaves
- Serve and enjoy!
