Cafe quality if I do say so myself! You’ll have yourself feeling like you are eating out every morning. Hot tip - don’t not add the yoghurt mixture....it’s a must! X
Prep: 15 mins | Cook time: 5 mins | Serves: 4-6
What you will need:
- 2x Zucchinis, grated and drained
- 1x Carrot, grated and drained
- 1 Medium can of corn kernels
- A handful of spring onions
- 1 1/2 Cups of plain flour
- Half a block of halloumi, grated
- 2x Eggs
- 1x Tbsp EVOO
- 1/4 Cup of greek yogurt with a squeeze of lemon juice and salt + pepper
- Protein of your choice - I've used smoked salmon
Method
- Add the zucchini, carrot, corn, spring onions, flour and eggs in to a mixing bowl and stir through until it becomes a sticky batter consistency
- Heat up the EVOO in a pan on medium heat and then add a spoonful of mixture into the pan and flatten it down a little with the spoon to create the fritter. Heat on both sides until halloumi has melted through and it becomes a golden colour
- Place the fritters on your plate and sprinkle the protein of choice on top
- Add a dollop of the greek yogurt mixture on top and a sprinkle of the spring onion
- Serve and enjoy!
