Zucchini and Halloumi Fritters

Cafe quality if I do say so myself! You’ll have yourself feeling like you are eating out every morning. Hot tip - don’t not add the yoghurt mixture....it’s a must! X

Prep: 15 mins | Cook time: 5 mins | Serves: 4-6

 

What you will need:

  • 2x Zucchinis, grated and drained
  • 1x Carrot, grated  and drained
  • 1 Medium can of corn kernels
  • A handful of spring onions
  • 1 1/2 Cups of plain flour
  • Half a block of halloumi, grated
  • 2x Eggs
  • 1x Tbsp EVOO
  • 1/4 Cup of greek yogurt with a squeeze of lemon juice and salt + pepper
  • Protein of your choice - I've used smoked salmon

 

Method

  • Add the zucchini, carrot, corn, spring onions, flour and eggs in to a mixing bowl and stir through until it becomes a sticky batter consistency
  • Heat up the EVOO in a pan on medium heat and then add a spoonful of mixture into the pan and flatten it down a little with the spoon to create the fritter. Heat on both sides until halloumi has melted through and it becomes a golden colour 
  • Place the fritters on your plate and sprinkle the protein of choice on top
  • Add a dollop of the greek yogurt mixture on top and a sprinkle of the spring onion
  • Serve and enjoy!
