Peach and Prosciutto Wreath

Just filling your feed with another wreath salad 😉 Rocket, peach, prosciutto, buffalo mozzarella, olive oil, balsamic glaze and finished off with salt and pepper. Perfect for Christmas Day 🥗🎄

Prep: 15 mins | Cook time: 5 mins | Serves: 4-6

 

What you will need:

  • 2 Slices of sourdough 
  • 1 Packet of rocket
  • 2 Peaches, sliced
  • 200g Prosciutto, torn into pieces
  • Mozzarella ball
  • Basil leaves
  • EVOO
  • Salt and Pepper
  • Balsamic glaze
  • A circular platter

 

Method

  • Start by heating up some EVOO in a fry pan and frying up the sourdough slices for 2 mins on each side (or until golden). Remove from the pan, allow to cool and then chop them up into pieces to create the croutons
  • Form the 'wreath' circle using the rocket on a circular platter. Don't be afraid to go quiet high with the rocket, it will look lush!
  • Layer the slices of peach on top of the wreath and place the prosciutto pieces in between the peach slices
  • Break up the mozzarella ball and layer the pieces on top followed by the croutons
  • Drizzle over some EVOO and balsamic glaze
  • Sprinkle over some salt and pepper
  • Serve and enjoy!
