Massaman Beef Bowl

Prep: 15 mins | Cook time: 20 mins | Serves: 3-4

 

What you will need:

  • 2 Tbsp butter
  • 1 Onion, finely diced
  • 3 Garlic cloves, finely diced
  • 1 Tbsp EVOO
  • 500g Lean beef mince
  • 3 Tbsp Massaman curry paste
  • 200ml Coconut milk
  • 1/2 cup Chicken or Beef stock 
  • A handful of baby spinach, chopped
  • Steamed broccolini 
  • Cooked rice
  • A handful of roasted peanuts, chopped 
  • Chilli
  • Coriander, chopped

 

Method

  • Start by heating the EVOO in a large fry pan on medium-high heat 
  • Add in the onion and cook, stirring continuously, until softened. Add in the garlic and allow to sauté for 1 minute
  • Add the beef mince and break up with a spoon as you go. Cook until the liquid has dried up, approximately 5 minutes
  • Add the Massaman curry paste and stir through to coat the mince 
  • Add in the coconut milk and stock and reduce heat to a simmer for 5 minutes until it slightly thickens
  • Stir through the baby spinach and allow to wilt, approximately 1 minute
  • Serve with cooked rice, steam greens, chopped peanuts and a sprinkle of fresh chilli and coriander.
