Prep: 15 mins | Cook time: 20 mins | Serves: 3-4
What you will need:
- 2 Tbsp butter
- 1 Onion, finely diced
- 3 Garlic cloves, finely diced
- 1 Tbsp EVOO
- 500g Lean beef mince
- 3 Tbsp Massaman curry paste
- 200ml Coconut milk
- 1/2 cup Chicken or Beef stock
- A handful of baby spinach, chopped
- Steamed broccolini
- Cooked rice
- A handful of roasted peanuts, chopped
- Chilli
- Coriander, chopped
Method
- Start by heating the EVOO in a large fry pan on medium-high heat
- Add in the onion and cook, stirring continuously, until softened. Add in the garlic and allow to sauté for 1 minute
- Add the beef mince and break up with a spoon as you go. Cook until the liquid has dried up, approximately 5 minutes
- Add the Massaman curry paste and stir through to coat the mince
- Add in the coconut milk and stock and reduce heat to a simmer for 5 minutes until it slightly thickens
- Stir through the baby spinach and allow to wilt, approximately 1 minute
- Serve with cooked rice, steam greens, chopped peanuts and a sprinkle of fresh chilli and coriander.
