What you will need:
- 2 Eggplants, thinly sliced
- EVOO
- Salt
- Pepper
- Bolognese sauce
- Grated cheese
- 1 Pack of cherry tomatoes, sliced thinly
- A handful of basil, chopped

Method
- Start by preheating your oven to 180°C, line a baking tray with baking paper and set aside
- Thinly slice the eggplants and lay them on the baking tray. Lightly brush over them with some EVOO
- Sprinkle some salt over the top of them and place them in the oven for 12 mins
- Pull the tray out of the oven and spoon a layer of bolognese sauce over the top of half the eggplant slices and then sprinkle over some grated cheese, top with another eggplant slice and repeat the layering of bolognese sauce and grated cheese
- Add some cherry tomato slices over the top and a sprinkle of basil, salt and pepperÂ
- Place the eggplants back into the oven for 12 mins
- Serve and enjoy!
