High Protein Raspberry Cheesecake

High Protein healthy cheesecake 🍰 We all know I’m on the journey of chasing more protein in my diet and this is an absolute winner 🤤 breakfast, dessert or even just a snack. Yum x

Prep: 5 mins | Cook time: 45 mins | Serves: 4


What you will need:

  • 200g Cottage cheese
  • 160g Yogurt
  • 2 Eggs
  • 1/4 Cup Maple syrup 
  • 1 Tsp Vanilla extract 
  • 2 Tbsp Cornflour
  • A handful of raspberries
  • Whizzing device


Method

  • Start by preheating your oven to 180°C and line a small baking dish with baking paper and set aside 
  • Add the cottage cheese, yogurt, eggs, maple syrup, vanilla extract and cornflour to your whizzing device and blitz until smooth and combined
  • Pour the batter into the baking dish and sprinkle a handful of raspberries over the top
  • Pop it in the oven for 40-45 minutes 
  • Remove from the oven and serve and enjoy!
