This recipe is so easy, looks impressive and tastes incredible!
Prep: 10 mins | Cook time: 5 mins | Serves: 4-6
What you will need:
- 1x Ball of burrata
- A handful of basil, chopped
- 1 Tbsp thyme
- 4x Capsicums
- Salt & Pepper
- Olive oil
Dressing
- 2 Tbsp of red wine vinegar
- 2x Cloves of garlic, crushed
- 3/4 Cup of olive oil
- Salt & Pepper
- Squeeze of lemon
- Chilli flakes - optional
Croutons
- 2-3 Slices of sourdough
- A drizzle of olive oil
- 1 Tsp butter
- Salt & Pepper
- Garlic salt
Method
- Start by making the croutons - melt the butter and olive oil in a pan over medium-high heat, add the slices of sourdough into the pan and sprinkle over the salt, pepper and garlic salt. Heat until both sides have browned and then remove and allow to cool. Once cooled, chop roughly and set aside
- Combine all the dressing ingredients in a small jar and set aside
- Drizzle the capsicums with olive oil, salt & pepper and char on both sides over the bbq or grill pan
- Plate the capsicums, face up, on your platter
- Sprinkle the croutons over the top and dollop the burrata all over
- Drizzle over the dressing
- Sprinkle over the basil leaves and thyme
- Serve and enjoy!
