Indulgent Gnocchi with Brie and Bacon. Huge wow! A little bit of a cheeky treat for your week night. Please try this!

Prep: 5 mins | Cook time: 20 mins | Serves: 1-2
What you will need:
- 1 Packet of gnocchi
- 1 Tbsp EVOO
- 1/2 Cup bacon, chopped
- 1/2 Onion, chopped
- 1 Garlic clove, crushed
- 250g Chicken stock
- 1 Wheel if brie, rind removed
- 300ml Cooking cream
- A handful of parsley, chopped
Method
- In a fry pan, heat up the EVOO and then fry off the bacon. Remove with a slotted spoon
- Using the same pan, add the onion and garlic and allow to caramelise
- Add the chicken stock and bring to a boil and then lower to simmer
- Add the brie wheel into the sauce along with the cream and stir until melted
- Once melted, add the bacon back into the pan with a handful of parsley and stir through
- Add the gnocchi to the pan, pop the lid on and allow them to simmer in the sauce until cooked
- Serve and enjoy!
