I'm putting these up there with the prawn tacos I tried last year. Wow these are delicious!
Prep time: 15 mins | Cook time: 15 mins | Serves: 4
What you will need:

1½ Cups cooked rice

3 Sheets nori, cut into 12 squares

½ Kilo of peeled and deveined prawns (uncooked), cut into small pieces

Pinch of salt

½ Cup softened cream cheese
-
3 Tbsp Kewpie sriracha mayo

2 Tbsp Soy sauce
-
1 Lime
-
Chives for garnish
Method
- Prepare 2 cups of rice according to package instructions and set aside
- Preheat your oven to 200°C
- Add the chopped prawns into a bowl and add the cream cheese, kewpie mayo, sriracha, soy sauce and some salt and stir to coat and combine
- Add a spoon of cooked rice to your cut to size nori and place into a muffin tray. Proceed with filling all muffin holes and then top the rice with a spoon of the prawn mix
- Pop the tray into the oven for 15 mins
- Once they are done, squeeze over some lime juice, drizzle some more sriracha mayo over the top and sprinkle over some chopped chives
- Serve immediately and enjoy!
